Our small batched traditional barrel aged balsamic vinegar is from Modena, Italy. All of our balsamic is made from the well matured, cooked must of Lambrusco and Trebbiano grapes. It is aged slowly in fine wooden barrels until it is sweet and dense (with a high density of 1.34). Proper aging produces a balsamic vinegar with an outstanding intense aroma and a dense, velvety texture that is surprisingly combined with a lightness and just a delicate hint of acidity (4.5%). It can invigorate so many foods—everything from salads and fruit to meat and cheese. Even ice cream!
