Our small batched traditional label barrel-aged balsamic vinegar is from Modena, Italy. Our balsamic is made from the well-matured, cooked must of Lambrusco and Trebbiano grapes. It is aged slowly in fine wooden barrels composed of oak, mulberry, chestnut, and juniper until it is sweet and dense (with a high density Of 1.34). Proper aging produces a wonderfully intense balsamic vinegar with an outstanding intense aroma that is dense and velvety in texture, while maintaining a lightness and delicate hint of acidity (4.5%).
