Garlic Olive Oil Roasted Vegetables

Ingredients:

  • 2 cups broccoli florets
  • 2 cups sliced carrots
  • 1 red bell pepper, sliced
  • 2 tablespoons Tastefully Olive Garlic Infused Extra Virgin Olive 
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Toss the vegetables with garlic olive oil, salt, pepper, and thyme.
  3. Spread on a baking sheet in a single layer.
  4. Roast for 20-25 minutes, stirring halfway, until tender and slightly crispy.
  5. Serve hot as a side dish.
